Suggestions on a kitchen remod on a budget?

Looking at new appliances and countertop. What look for the appliances (black, white, stainless)? What type of material for the countertops? My home was built in the late 50's, I am the second owner, all I have done in the kitchen was replace the flooring with tile. I know trends are toward the stainless and granite but ouch with the price tag?!!!!?
